Smyrna, Delaware – Painted Stave Distilling’s Vice President confirmed the rumors today, Delaware’s first Bourbon Whiskey will be released on November 14th. Delaware’s inaugural Bourbon, Diamond State Bourbon Whiskey, will be released at noon on Saturday November 14th to celebrate Painted Stave Distilling’s two year anniversary. All bottles will be available on a first come basis.

Resting in the back of Painted Stave’s production space have been three small barrels of Bourbon, slowly mellowing for the last year. The barrels were filled on October 9th, 2014, with Congressman John Carney in attendance to fill the first barrel. 30+ gallons of clear liquid went in that day, and a year later out came a new Delaware first. The resulting spirit will be bottled on October 27th during a special bottling event and then held under lock and key until the release on November 14th.

Some people ask how we can make Bourbon in Delaware, thinking it had to be made in Kentucky? Ahh, a common misconception. Bourbon can be made anywhere in the United States, and these days even the big distillers have plants outside of Kentucky that they get bourbon from. To be called Bourbon, the spirit has to be distilled in the USA from a grain mash that is at least 51% corn. Also, Bourbon must come off the still below 160 proof and be added to New Charred American Oak Barrels under 125 proof. There is no minimum aging time for Bourbon, but to be called Strait Bourbon it has to be aged for at least 2 years, and anything under 4 years requires an age statement on the bottle.

Diamond State Bourbon Whiskey is distilled from a mash that is 65% corn, 26% Rye and 9% Malted Barley. This first release has been aged for one year in 10 gallon oak barrels and there will be about 160 bottles total. This batch will only be available at the distillery, starting at noon on November 14th, but future releases beginning early next year will be larger and will be available through distribution.
